So why are democrats going after the egg farmers?

What do you expect them to do? Ignore it? I don't know about you, but I do not want to get sick or die from salmonella. I don't care if they have to destroy every egg, shoot every chicken and burn every coop. People want to cut government funding, but they complain that there aren't enough inspectors to guarantee their safety.
